Matcha Mini Crepes

Light and fluffy mini crepes with the rich and smooth flavor of matcha green tea. A simple and healthy low FODMAP recipe that is also gluten and dairy free.

Ingredients

  • 1/2 cup | 50 g rice flour
  • 1/2 cup | 50 g tapioca
  • 1 tsp matcha powder
  • 2 eggs
  • 1 cup | 200 ml almond milk or rice milk

Instructions

  • In a big bowl add the four, tapioca and matcha and combine.
  • Add in the eggs and beat until well incorporated.
  • Slowly pour in the vegetable milk while beating.
  • Let stand for 15 minutes, minimum.
  • Pour in a ladle of batter in a hot small non-stick pan.
  • Cook over medium heat for 2 to 4 minutes and flip. Cook for another minute and remove to a plate.
  • Continue until all batter is gone.
