Matcha Mini Crepes
Light and fluffy mini crepes with the rich and smooth flavor of matcha green tea. A simple and healthy low FODMAP recipe that is also gluten and dairy free.
Servings: 10 mini crepes
- 1/2 cup | 50 g rice flour
- 1/2 cup | 50 g tapioca
- 1 tsp matcha powder
- 2 eggs
- 1 cup | 200 ml almond milk or rice milk
In a big bowl add the four, tapioca and matcha and combine.
Add in the eggs and beat until well incorporated.
Slowly pour in the vegetable milk while beating.
Let stand for 15 minutes, minimum.
Pour in a ladle of batter in a hot small non-stick pan.
Cook over medium heat for 2 to 4 minutes and flip. Cook for another minute and remove to a plate.
Continue until all batter is gone.
